Chef Stephen Walls (Chef Steve)
Apple Farm Restaurant
Stephen Walls (known as Chef Steve around here) is
the Executive Chef at the Apple farm Restaurant. The Apple Farm Restaurant is
known for it's traditional American hospitality, with high quality food, honest
value and an extensive menu available for breakfast, lunch and dinner.
Growing Up: Stephen was born in Los Angeles California and
spent his first 10 years of life there. His parents decided they wanted to be
more rural so they moved to a small town called Ukiah in northern California.
He survived in spite of that. Actually, he says it made him a better person.
Culinary Career: Stephen started his career in the culinary
world as a buss boy in a newly renovated "Palace Hotel" in downtown
Ukiah California in 1975. Later promoted to bartender he found that he really
enjoyed the restaurant business. He was hooked and worked in many restaurants
over the years. After his stint at the "Palace" he went from the
floor to the kitchen spending many hours in different restaurants perfecting
his skills, finally landing at the Apple Farm Restaurant as a line cook, and
eventually working his way up to Executive Chef.
Culinary Style: Stephen's personal style has a strong
emphasis on Mediterranean cuisine, with accents on fresh herbs, seafood, pasta,
garlic, tomatoes, fresh vegetables and a variety of fresh seasonal food items
that range from the exotic to the everyday good old down home cooking.
Business Philosophy: Stephen says, "feeding thousands
of guests a week is satisfying and rewarding. We get so many compliments on the
quality of the food and service". Quality is priority and the best quality
comes from your own local community. He has worked with many local chefs over
the last twenty years and has taken a bit of knowledge from each and every one
so naturally his tastes fall with local produce and product, which he tries to
incorporate into his every day operations at the Apple Farm.
